Claims (8)
- 食品を形成する細胞組織が真空下の状態における、運動エネルギーと熱エネルギーの制御・パラメータ化管理に基づいた、調理前の食品の熟成手順。超音波を発生させ[図1(12)]、液体中で作用し[図1(18)]、タンクに収容され[図1(10)]、真空下に置かれ[図6(68)]、循環ポンプで動く[図1(13)]1台以上のトランスデューサを使用。
特徴:
・液体[図1(18)]は、処理される食品[図2](23)を浸し、液体不透過性だが超音波を透過する適したプラスチック容器に入れる。[図2(22)]
・超音波トランスデューサ[図8(80)]は、超音波トランスデューサの放射領域[図8(81)]に配置された凸レンズ[図8(82)]と接続されている。 - 要求事項1による熟成手順では、超音波を介して食品に供給されるエネルギーの強度、変調、周波数の範囲、デューティ比、のレベルがパラメータ化されている[図7]。それにより、タンクの水温が一定に保たれ[図1(10)]、液体に溶解した気体の存在を安定させる[図1(18)]。
- 超音波の照射[図6(64)]、熱を利用した方法[図6(62)]、適した容器に入れた食品に対する運動エネルギーの使用[図6(65)]、(液体の強制循環によるもの[図6(63)(67)])による食品の調理。この調理法は、食品が熱により受ける影響を限定するために、真空下で[図6(68)]、制御された温度のもとで行われる。
- 第1、2、3項に記載の、超音波ブーストによる熟成・調理手順を適用可能な装置は、密閉・開閉可能[図1(11)]で空気吸引ポンプにより真空状態を生成可能[図1(114)]なタンク[図1(10)]、タンクに組み込まれた超音波トランスデューサーの配列[図1(12)]その中の液体の再循環システム,[図1(13)]レベルの自動制御[図1(100)]、電気抵抗によるタンクの全壁の加熱システム[図1(15)]一連の温度センサ[図1(17)]、圧力センサ[図1(16)]、一つ以上の防水プラスチック容器[図5(52)]で構成されている。
- 第4項に記載の装置では、関連するそれぞれの電子・電気機械デバイス[図1(12)(13)(14)(15)(16)(17)(100)]はPLC[図1(19)]により制御されており、ユーザーは、調理・超音波ブースト熟成手順を開始、停止、編集、追加することができる。
- 液体不浸透性なプラスチック素材[図2(20)]は、第4、5項に記載の装置のタンク内に挿入可能で、超音波トランスデューサに刺激された際に、超音波の内側に分散することができる[図4(42)]。トランスデューサは構成素材の密度により特徴づけられ、タンク内で浸された液体[図5(52)]と等しい音響インピーダンスを与える。
- 第6項に記載の、液体不浸透性なプラスチック容器[図4(40)]は、外側から誘導される熱調節に対しては透過性。
- 第5、6項に記載のデバイスは、液体内の超音波の分散効率を上げる真空状態[図6(68)]と超音波トランスデューサ[図6(64)]を使用することにより、最新技術と比較してもより良いエネルギー効率を備えている[図1(18)]。
