Abstract

La invención consiste en la definición de un procedimiento según pautas teóricas y experimentales y el equipo relacionado que nos ha permitido modificarlo sustancialmente con respecto a la técnica anterior del tratamiento de alimentos, especialmente de origen animal, en las fases de maduración y cocción, conjugando así la mayor parte de los beneficios de ambos procesos. Este proceso obtenido de acuerdo con la idea de la invención mejora las características de masticabilidad, digestibilidad, presencia de nutrientes e hidratación del alimento. Además, esta invención garantiza la ausencia de sustancias tóxicas debido a los procesos de cocción y mejora la contribución de la marinación de alimentos y sustancias aromáticas.
