Description
この出願は、2009年1月15日出願の米国特許出願61/144,824及び2009年1月15日出願のカナダ特許出願2649936を優先権主張しており、その内容がこれを参照することで全体として本願に組み入れられている。
水分含量%=(mw/msample)×100
mwは水の質量、msampleは試料の質量である。水の質量は以下の式で表される水分子の数(nw)に関係する。
Mw=nwMw/NA
Mwは水の分子量(18.0g/mol)、NAはアボガド係数(モルあたり分子6.02×1023)である。原則的に、既知の試料の質量中に存在する水分子の数または質量を測定することにより蜂蜜製品の水分含量は正確に決定できる。食品の水分含量を測定中は、水分の増減を防ぐことが重要である。よって、試料を大気にさらすことや気温の過度の変動は最小限にするべきである。

本発明の蜂蜜製品の製造には、シロツメグサ、ムラサキツメクサ、及び/またはタンポポからの花蜜の混合の液状の蜂蜜を、抽出、液化、濾過、短期低温殺菌されたものが使われ、任意でレモン油も原料に使われる。
また、本発明の蜂蜜製品の製造に、不透水性食品級包装、食品級PVC包装トレイ、及び水に対しハイバリアの食品級の封止フィルムが材料に使用される。
また、本発明蜂蜜製品の製造に、重量計、電子万能ミキサー、熱電対温度計、赤外線(IR)水分計、及び熱シーラーが使用される。
水分を除去した蜂蜜製品を成形トレイに分注する前に、迅速に水分含量を調べるため、5gのサンプル単位が採取されてIR水分計で水分が測定された(実施例Iで記載)。蜂蜜製品の水分含量は0.0−1.1重量%であった。
Claims (12)
- 本質的に蜂蜜から成り、水分含量が0.1重量%以下である固形状の蜂蜜製品の製造方法において、
加熱された液状の蜂蜜を得るために、液状の蜂蜜を温度が少なくとも98℃に達するまで加熱する工程と、
水分含量が0.1重量%以下の脱水された蜂蜜を得るために、前記加熱された液状の蜂蜜に少なくとも27inHgの圧力を負荷する工程と、
前記固形状の蜂蜜製品を得るために前記脱水された蜂蜜を冷却する工程とを含むことを特徴とする製造方法。 - 前記蜂蜜製品に香味料を添加する工程を含む請求項1に記載の製造方法。
- 前記香味料はレモンの香味料である請求項2に記載の製造方法。
- 蜂蜜製品にレモン油を添加する工程を含む請求項3に記載の製造方法。
- 前記蜂蜜製品を粉にしたり、砕いたり、挽いたり粒状にする工程を含む請求項1に記載の製造方法。
- 前記蜂蜜製品に乳化剤、反粘性の作用物質及び、又は安定剤を添加する工程を含む請求項1に記載の製造方法。
- 前記蜂蜜製品を不透水性の膜で包装する工程を含む請求項1に記載の製造方法。
- 前記蜂蜜製品の水を実質的に再吸収しない保存期間が少なくとも1年である請求項7に記載の製造方法。
- 前記蜂蜜製品は、少なくとも1年間保存して固形状を維持することができる請求項1−8のいずれかに記載の製造方法。
- 前記蜂蜜製品を上気道ケア製品の製造に利用する請求項1に記載の製造方法。
- 前記上気道ケア製品は、のど飴である請求項10に記載の製造方法。
- 前記蜂蜜製品を菓子類の製造に利用する請求項1に記載の製造方法。
