前記バイオマスが、クロレラ・プロトセコイディス(Chlorella protothecoides)またはプロトセカ・モリフォルミス(Prototheca moriformis)のバイオマスを含んでなる、項目7に記載の方法。

前記微細藻類バイオマスが、遺伝子改変微細藻類細胞に由来する、項目1〜8のいずれか一項に記載の方法。

前記微細藻類バイオマスが、微細藻類を暗所で培養することで生成される、項目1〜9のいずれか一項に記載の方法。

前記培養が、固定炭素源を追加するステップを含む、項目10に記載の方法。

平均氷晶円相当径の百分率変化によって決定される氷晶成長速度が、前記改質冷凍食品中において、前記候補冷凍食品との比較で少なくとも5%低下する、項目1〜11のいずれか一項に記載の方法。

10人の味覚パネルの内2人以下が、−20℃で同期間貯蔵された対照製品との比較において、実施例1の凍結解凍サイクルを実施した前記改質製品中の氷晶認知増大を検出し得る、項目1〜12のいずれか一項に記載の方法。

「バイオマス」は、生きている生物に由来する材料を意味するものとする。
1.1パイントの試験冷凍製品および対照冷凍製品をサイクルまたは非サイクル冷凍庫に入れる。
2.初期温度および保持温度は、−10°Fに設定する。
3.21日間にわたり以下の設定で、冷凍庫霜取りサイクルを毎日3回、霜取りに設定する。
●冷凍庫サイクル−10°F〜40°F
●各温度で15分間の保持時間
●勾配速度5分間
1.藻類粉末、安定剤、塩、砂糖、およびココアの順で全成分を混合する。取り除けておく。
2.コーンシロップ、脱脂乳、および乳固形分を添加する。混合して乾燥混合物にする。最後にクリームを添加する。
3.180°Fで15秒間低温殺菌する。
4.GEA NiroSoavi Pandaホモジナイザーを使用して、180°F/30バールで均質化する。混合物を150°Fで二重鍋に入れて、ホモジナイザーにかける。
5.混合物を冷蔵する。
6.フレーバーを添加する。
7.アイスクリーム製造器(Taylor Company)に入れる。30〜40%のオーバーランを標的とする。
