Abstract

Description
本明細書で用いられる「配糖体混合物」の用語は、ステビア植物から得られる様々な配糖体の混合物を意味する。これらの配糖体は、限定されるものではないが、レバウジオシドA〜F、ステビオシド、ズルコシド(dulcoside)、ステビオビオシド(steviobioside)およびルブソシド(rubusoside)を含む。特に、本発明の配糖体混合物は、主としてレバウジオシドA、レバウジオシドBおよび/またはレバウジオシドDからなる混合物を含む。
REB−BD配糖体混合物
驚くべきことに、出願人は、あるSEVレベルにおいて、レバウジオシドBおよびレバウジオシドDの特定の混合物が、驚くべきことに、純粋なレバウジオシドBまたは純粋なレバウジオシドDのいずれと比較して、より高い甘味能力を有していることを見いだすに至った。従って、純粋なレバウジオシドBまたはレバウジオシドDに代えて、これらの混合物を利用することによって、有意なコスト削減をもたらすことができる。

驚くべきことに、出願人は、あるSEVレベルにおいて、レバウジオシドAおよびレバウジオシドBの特定の混合物が、驚くべきことに、純粋なレバウジオシドAまたは純粋なレバウジオシドBのいずれと比較して、より高い甘味能力を有していることを見いだすに至った。
レバウジオシドA、レバウジオシドBおよびレバウジオシドDの特定の3種の混合物で、特定のSEVレベルのものが、驚くべきことに、純粋なレバウジオシドA、レバウジオシドBまたはレバウジオシドDと比べて、改善された甘味能力を有していることが見いだされた。
他の実施態様において、甘味料組成物がREB−ABD配糖体混合物を含み、ここでREB−ABD配糖体混合物が、レバウジオシドA15%〜52%、レバウジオシドB32%〜71%およびレバウジオシドD14%〜25%(配糖体混合物における、レバウジオシドA、レバウジオシドBおよびレバウジオシドDの総量に対して)を含み、そしてREB−ABD配糖体混合物が、甘味料組成物において3.9を超えるSEVを提供する。
特定の配糖体混合物を含む本発明の甘味料組成物は、他の原料を含んでもよい。いくつかの実施態様において、甘味料組成物はさらに、増量剤、高強度甘味料、香味料、酸化防止剤、カフェイン、他の栄養甘味料、塩、タンパク質または甘味増強剤(sweetness enhancer)を1またはそれ以上含んでもよい。
本発明の甘味料組成物は、食物および飲料組成物中にいれてもよい。従って、本発明は、本発明の甘味料組成物を含む食品組成物および飲料組成物にも関する。
本発明はまた、甘味料組成物の製造方法にも関する。代表的な従来のステビアベースの甘味料は、主としてレバウジオシドAからなる配糖体混合物(例えば、レバウジオシドA95%以上、またはレバウジオシドA97%以上)を含む。
20人の官能パネルを、甘味および苦味の測定のために訓練した。テイスティング標準基準を、各標準物質(甘味用のスクロースおよび苦味用のカフェイン)を逆浸透水に下記表1に示されるスケール値で溶かして準備した。
サンプルテスティングの間に、パネリストは、水およびリンゴスライスを用いて自身の味覚を浄化した。パネリストはまた、各サンプルの間、5分間待機した。パネリストの返答を、サンプルごとに測定し、まとめ、平均値を求めた。
Claims (20)
- 配糖体混合物を含む甘味料組成物であって、
配糖体混合物が、レバウジオシドB15%〜85%およびレバウジオシドD15%〜85%(配糖体混合物における、レバウジオシドBおよびレバウジオシドDの総量に対して)を含み、および、レバウジオシドBおよびレバウジオシドDが、配糖体混合物の少なくとも40%で含まれ;レバウジオシドBおよびレバウジオシドDの少なくとも353ppmの混合物濃度で水中の配糖体混合物が甘味を提供し、レバウジオシドB単独のisosweet濃度およびレバウジオシドD単独のisosweet濃度の両方が混合物濃度よりも高い、甘味料組成物。 - 配糖体混合物を含む甘味料組成物であって、
配糖体混合物が、レバウジオシドB60%〜85%およびレバウジオシドD15%〜40%(配糖体混合物における、レバウジオシドBおよびレバウジオシドDの総量に対して)を含み、および、レバウジオシドBおよびレバウジオシドDが、配糖体混合物の少なくとも40%で含まれ;レバウジオシドBおよびレバウジオシドDの少なくとも353ppmの混合物濃度で水中の配糖体混合物が甘味を提供し、レバウジオシドB単独のisosweet濃度およびレバウジオシドD単独のisosweet濃度の両方が混合物濃度よりも高い、甘味料組成物。 - 少なくとも353ppmの混合物濃度の水中の配糖体混合物が、レバウジオシドD単独のisosweet濃度よりも低減された苦味を有する、請求項1または2に記載の甘味料組成物。
- レバウジオシドBおよびレバウジオシドDが、配糖体混合物の少なくとも60%で含まれる、請求項1または2に記載の甘味料組成物。
- レバウジオシドBおよびレバウジオシドDが、配糖体混合物の少なくとも80%で含まれる、請求項1または2に記載の甘味料組成物。
- 配糖体混合物を含む甘味料組成物であって、
配糖体混合物が、レバウジオシドA30%〜60%およびレバウジオシドD40%〜70%(配糖体混合物における、レバウジオシドAおよびレバウジオシドDの総量に対して)を含み、およびレバウジオシドAおよびレバウジオシドDが、配糖体混合物の少なくとも60%で含まれ;レバウジオシドAおよびレバウジオシドDの少なくとも303ppmの混合物濃度で水中の配糖体混合物が甘味を提供し、レバウジオシドA単独のisosweet濃度およびレバウジオシドD単独のisosweet濃度の両方が混合物濃度よりも高い、甘味料組成物。 - 少なくとも303ppmの混合物濃度で水中の配糖体混合物が、レバウジオシドA単独のisosweet濃度およびレバウジオシドD単独のisosweet濃度の両方よりも低減された苦味を有する、請求項6に記載の甘味料組成物。
- レバウジオシドAおよびレバウジオシドDが、配糖体混合物の少なくとも80%で含まれる、請求項6に記載の甘味料組成物。
- レバウジオシドAおよびレバウジオシドDが、配糖体混合物の少なくとも90%で含まれる、請求項6に記載の甘味料組成物。
- 配糖体混合物を含む甘味料組成物であって、
配糖体混合物が、レバウジオシドA40%〜85%およびレバウジオシドB15%〜60%(配糖体混合物における、レバウジオシドAおよびレバウジオシドBの総量に対して)を含み、およびレバウジオシドAおよびレバウジオシドBが、配糖体混合物の少なくとも60%で含まれ;レバウジオシドAおよびレバウジオシドBの少なくとも350ppmの混合物濃度で水中の配糖体混合物が甘味を提供し、レバウジオシドA単独のisosweet濃度およびレバウジオシドB単独のisosweet濃度の両方が混合物濃度よりも高い、甘味料組成物。 - レバウジオシドAおよびレバウジオシドBが、配糖体混合物の少なくとも80%で含まれる、請求項10に記載の甘味料組成物。
- 少なくとも350ppmの混合物濃度で水中の配糖体混合物が、レバウジオシドA単独のisosweet濃度よりも低減された苦味を有する、請求項10に記載の甘味料組成物。
- 配糖体混合物を含む甘味料組成物であって、
配糖体混合物が、レバウジオシドA10%〜55%、レバウジオシドB30%〜75%およびレバウジオシドD10%〜30%(配糖体混合物における、レバウジオシドA、レバウジオシドBおよびレバウジオシドDの総量に対して)を含み、およびレバウジオシドAおよびレバウジオシドDが、配糖体混合物の少なくとも70%で含まれ;レバウジオシドA、レバウジオシドBおよびレバウジオシドDの少なくとも340ppmの混合物濃度で水中の配糖体混合物が甘味を提供し、レバウジオシドA単独のisosweet濃度、レバウジオシドB単独のisosweet濃度およびレバウジオシドD単独のisosweet濃度の各々が混合物濃度よりも高い、甘味料組成物。 - レバウジオシドA、レバウジオシドBおよびレバウジオシドDが、配糖体混合物の少なくとも90%で含まれる、請求項13に記載の甘味料組成物。
- 配糖体混合物が、a)レバウジオシドAのisosweet濃度のレバウジオシドAの濃度よりも低い、b)レバウジオシドBのisosweet濃度のレバウジオシドBの濃度よりも低い、およびc)レバウジオシドDのisosweet濃度のレバウジオシドDの濃度よりも低い、レバウジオシドA、レバウジオシドBおよびレバウジオシドDの濃度で少なくとも7.6のSEVを提供する、請求項13に記載の甘味料組成物。
- 甘味料組成物がさらに増量剤を含む、請求項1〜15いずれかに記載の甘味料組成物。
- 甘味料組成物がさらに低血糖炭水化物を含む、請求項1〜15いずれかに記載の甘味料組成物。
- 甘味料組成物がさらにエリトリトールを含む、請求項1〜15いずれかに記載の甘味料組成物。
- 甘味料組成物がさらにイヌリンを含む、請求項1〜15いずれかに記載の甘味料組成物。
