Abstract
Description
ロリポップの工業的製造には、2つの方法:型成形および注入(depositing)が現在利用できる。
本発明は、
a)少なくとも一つの塊(mass)の調理済み(cooked)キャンディー組成物を提供する(providing)ステップ;
b)調理済みキャンディー組成物を、中空ロープに加工するステップ;
c)ロープの中空領域に、チョコレートコア(core)を含む固形の食用組成物の粒子を充填するステップ;
d)場合によって、所望の重量の断片にロープを切断するステップ;
e)キャンディー領域を通して、ロープまたはロープの断片内に、かつ少なくとも部分的に充填中空領域中に、棒を挿入するステップ;
f)ロープまたはロープの断片を、外側のキャンディー領域によって囲まれたチョコレートを含む領域を画定する(defining)ロリポップに型成形するステップ;
g)ロリポップを冷却するステップ
を含む、充填ロリポップの製造方法に関する。
−外側のキャンディー領域、
−キャンディー領域によって囲まれたチョコレートを含む領域
を含み、その同じ(the same)領域にわたって融点が不均一であることを特徴とし、
キャンディー領域を通して、かつ少なくとも部分的にチョコレートを含む領域中に、挿入された棒をさらに含む、
型成形ロリポップに関する。
本出願人は、チョコレートが充填された型成形ロリポップが、以下のステップ:
a)少なくとも一つの塊の調理済みキャンディー組成物を提供するステップ;
b)調理済みキャンディー組成物を、中空ロープに加工するステップ;
c)ロープの中空領域に、チョコレートコアを含む固形の食用組成物の粒子を充填するステップ;
d)場合によって、所望の重量の断片にロープを切断するステップ;
e)キャンディー領域を通してロープまたはロープの断片内に、かつ少なくとも部分的に充填中空領域中に、棒を挿入するステップ;
f)ロープまたはロープの断片を、外側のキャンディー領域によって囲まれたチョコレートを含む領域を画定するロリポップに型成形するステップ;
g)ロリポップを冷却するステップ
を含む方法を使用して製造されうることを見出した。
h)チョコレートを含む粒子を提供するステップ、
i)高融点食用組成物を提供するステップ、および
j)チョコレートを含む粒子を高融点食用組成物で覆うステップ
を含む方法によって製造される。
−外側のキャンディー領域、および
−キャンディー領域によって囲まれたチョコレートを含む領域
を含み、その同じ領域にわたって融点が不均一であることを特徴とし、
キャンディー領域を通して、かつ少なくとも部分的にチョコレートを含む領域中に、挿入された棒をさらに含み、ロリポップの外表面または棒の見える部分にチョコレートが存在しない、型成形ロリポップにも関する。
例1−型成形ロリポップの調製
従来の機器によって、以下の組成のシロップを提供する:

Claims (17)
- a)少なくとも一つの塊の調理済みキャンディー組成物を提供するステップ;
b)調理済みキャンディー組成物を、中空ロープに加工するステップ;
c)ロープの中空領域に、チョコレートコアを含む固形の食用組成物の粒子を充填するステップ;
d)場合によって、所望の重量の断片にロープを切断するステップ;
e)キャンディー領域を通してロープまたはロープの断片内に、かつ少なくとも部分的に充填中空領域中に、棒を挿入するステップ;
f)ロープまたは断片を、外側のキャンディー領域によって囲まれたチョコレートを含む領域を画定するロリポップに型成形するステップ;
g)ロリポップを冷却するステップ
を含む、充填ロリポップの製造方法。 - ステップa)からf)におけるキャンディー組成物の温度が、チョコレートの融点を超える、請求項1に記載の方法。
- 前記キャンディー組成物の温度が30℃を超える、請求項2に記載の方法。
- 前記キャンディー組成物の温度が、40℃を超え、90℃未満である、請求項3に記載の方法。
- ステップb)が、押出機またはバッチローラーによって提供される、請求項1に記載の方法。
- ステップd)の前に、ロープの直径が一連のロープサイザーホイール(seizers wheels)によって所望の幅に調節される、請求項1から5のいずれか一項に記載の方法。
- ステップd)およびe)が、ロータリー型またはチェーン型から選択される型によって達成される、請求項1から6のいずれか一項に記載の方法。
- チョコレートコアを含む粒子が、ステップc)の後に、合わさって単一の塊にされる、請求項1から7のいずれか一項に記載の方法。
- チョコレートコアを含む粒子が、ステップf)の間に、合わさって単一の塊にされる、請求項8に記載の方法。
- 単一の塊が、キャンディー領域に結合する、請求項8または9に記載の方法。
- ステップc)の粒子が、
h)チョコレートを含む粒子を提供するステップ;
i)高融点組成物を提供するステップ;
j)ステップh)のチョコレート粒子をi)の組成物で覆うステップ
を含む方法を通して製造される、請求項1に記載の方法。 - 高融点組成物が、40℃で90%を超える固形物百分率を有する、請求項11に記載の方法。
- 請求項1から12の方法によって得られる、充填ロリポップ。
- 少なくとも2つの領域:
−外側のキャンディー領域、
−キャンディー領域によって囲まれたチョコレートを含む領域
を含み、その同じ領域にわたって融点が不均一であることを特徴とし、
キャンディー領域を通して、かつ少なくとも部分的にチョコレートを含む領域中に、挿入された棒をさらに含む、
型成形ロリポップ。 - チョコレートを含む領域が、
−ココア固形物を含む1つまたは複数の別個の領域、
−ココア固形物を含まない1つを超える別個の領域
から構成される、請求項14に記載のロリポップ。 - ココア固形物を含む別個の領域が、ビターチョコレート、ミルクチョコレート、ジャンドゥーヤナッツチョコレート、ホワイトチョコレート、合成チョコレートまたは模造チョコレート、気泡入りチョコレート、およびそれらの混合物からなる群から選択されるチョコレートを含む、請求項15に記載のロリポップ。
- ココア固形物を含まない別個の領域が、ハードファット、炭水化物、糖、ポリオール、繊維、結合剤、ゼリー化剤、タンパク質、ワックス、乳、乳製品、またはそれらの混合物を含む、請求項15に記載のロリポップ。
