(3)有機酸及びその酸性塩(b)がフマル酸、フマル酸一ナトリウム、クエン酸、リンゴ酸、酒石酸、酒石酸水素カリウム、コハク酸、コハク酸一ナトリウム、アジピン酸、乳酸、アスコルビン酸、フィチン酸、グルコン酸(グルコノデルタラクトンを含む)、酢酸、醸造酢から選ばれた少なくとも1種である(1)又は(2)記載の生食用生肉の風味改良変質防止剤、
(4)さらに有機酸の酸性塩以外の塩又は糖類を含有する(1)〜(3)記載の生食用生肉の風味改良変質防止剤、
(5)有機酸の酸性塩以外の塩が、クエン酸三ナトリウム、リンゴ酸ナトリウム、酒石酸ナトリウム、コハク酸二ナトリウム、乳酸ナトリウム、アスコルビン酸ナトリウム、グルコン酸ナトリウム、炭酸ナトリウム、炭酸水素ナトリウムの少なくとも1種である(4)記載の生食用生肉の風味改良変質防止剤、

(7)(1)に記載の生食用生肉の風味改良変質防止剤を固形分として0.5〜25重量%含有する生食用生肉の水性浸漬液、
