Description
血清コレステロールレベルに対する脂肪酸の影響(非特許文献3)を示す。
完全水素添加植物油を得るためには、含有するパルミチン脂肪酸濃度が20%未満、好ましくは15%未満であり、18炭素脂肪酸(ステアリン酸、オレイン酸、リノール酸及び/またはリノレン酸)含有量が70%より高い、好ましくは85%より高い植物油から始めなくてはならない。
液体植物油は、20%未満、好ましくは15%未満の飽和脂肪酸濃度を有していなくてはならない。
エステル交換は、新たな脂肪材料を得るために触媒の助けを借りて2つの脂肪材料を反応させることを特徴とし、新たに得られた脂肪材料のトリグリセリドにおける脂肪酸分布は、元々の2つの脂肪材料のものとは異なる。トリグリセリド中の脂肪酸の分布が変化することにより、元々の脂肪材料混合物とは溶融及び結晶化特性が異なる。
以下の脂肪酸プロファイル(ガスクロマトグラムから得たもの)を有し、漂白、脱臭、精製した大豆油を水素添加槽に装入し、真空下で、加熱ジャケットを使用して蒸気で150℃にまで加熱し、湿気を除去した。次に、300ppmのニッケル触媒を非選択的水素添加のために添加した。水素添加は、槽の内圧が200kPa(30psig、マノメータで測定)になった時点で始まった。水素添加反応により温度は180〜200℃に上昇し、圧力は、200kPa(30psig、マノメータで測定)に維持された。水素添加反応は約24時間かかった。最初は127gI2/100g(サンプル)であった大豆油のヨウ素価は1gI2/100g(サンプル)未満に低下した。次に水素添加弁を閉鎖し、ジャケットを通る冷水を使用した生成物の冷却に進んだ。
Claims (12)
- (1)10〜80%の完全水素添加植物油と、(2)飽和脂肪酸含有量が極めて低い20〜90%の液体植物油とのエステル交換によって得られ、
ステアリン脂肪酸を主成分とし、かつ、パルミチン酸の割合が低い飽和脂肪を有する
ことを特徴とする脂肪生成物。 - エステル交換が、好ましくは、(1)20〜50%の完全水素添加植物油と、(2)飽和脂肪酸含有量が極めて低い50〜80%の液体植物油とのエステル交換である
請求項1に記載の脂肪生成物。 - 飽和脂肪含有量が45%未満である
請求項1に記載の脂肪生成物。 - 総飽和脂肪含有量が好ましくは36%未満である
請求項1に記載の脂肪生成物。 - ステアリン脂肪酸の割合が20〜30%である
請求項1に記載の脂肪生成物。 - ステアリン脂肪酸の割合が好ましくは24〜27%である
請求項1に記載の脂肪生成物。 - パルミチン脂肪酸の割合が5〜15%である
請求項1に記載の脂肪生成物。 - パルミチン脂肪酸の割合が好ましくは7〜10%である
請求項1に記載の脂肪生成物。 - 完全水素添加植物油を得るために、パルミチン脂肪酸濃度が20%未満であり、18炭素脂肪酸含有量が70%より高い植物油から始める
請求項1または2に記載の脂肪生成物。 - 完全水素添加植物油を得るために、パルミチン脂肪酸濃度が15%未満であり、18炭素脂肪酸含有量が85%より高い植物油から始める
請求項1または2に記載の脂肪生成物。 - 液体植物油が20%未満の飽和脂肪酸濃度を有する
請求項1または2に記載の脂肪生成物。 - 液体植物油が好ましくは15%未満の飽和脂肪酸濃度を有する
