Abstract
Description
蒸留された海産物油のエチルエステル濃縮物を薄膜塔(長さ8m、直径250mm、スルザーBX金網充填物を備えたステンレス鋼塔)内において以下の運転条件で向流水蒸気蒸留に付した:
温度:150C、圧力:1〜2mバール、油供給ラテル(ratel):100kg/h、水蒸気供給量:1.8kg/h。
部分精製された海産物油を薄膜蒸発器において30mバールの減圧下で150℃に予備加熱した。その直後に、油を薄膜塔(長さ8m、直径250mm、スルザーBX充填物を備えたステンレス鋼塔)内において以下の条件下で向流水蒸気蒸留に付した:
温度:210℃、圧力:1〜2mバール、油供給量:100kg/h、水蒸気供給量:1.8kg/h。
(A)ロプファ「30」n−3食用油用のオランダ国のSmit&Zoonからの海産物油系DHAは以下の規格値を有する:

原料の海産物油500kgを、窒素中、1000Lの槽に供給した。これにシリカ(Silika)5%(w/w)を添加し、撹拌を開始した。槽内を40hPaに減圧した。100hPaに到達したらすぐに槽の内容物を70℃に加熱した。撹拌、温度、および圧力を5時間維持した。次いで、槽の内容物を40℃に冷却し、まず(firdt)10マイクロバッグフィルター、続いて1マイクロキャンドルフィルターで濾過した。濾過された油の半量にハーバロックスを2000ppm加えた。

PUFA油を連続向流水蒸気蒸留(CCSD)により脱臭した。油を脱臭塔に供給する前に、油を、温度140℃、圧力40hPaの脱泡装置で脱泡した。脱泡した後、油をさらに熱交換器で210℃の温度まで予備加熱し、次いで、脱臭塔の塔頂部に供給した。脱臭塔は、内径が50mmであり、規則充填物(型式:ケーニ(Kuehni)・ロンボパックS6M)を備えるものとした。塔内の規則充填物の長さは4mとした。塔内の充填物の下側に、標準的な水蒸気発生装置からの水蒸気を連続供給した。水蒸気の圧力を約4バール(4000hPa)とし、温度を約144℃とした。塔自体の内部は、3段真空ポンプ装置を用いて非常に低い真空度に維持した。塔頂部の圧力を2hPaに調節した。油液相および水蒸気気相の向流流れにより、付臭成分を油から除去した。油のマスフローン(mass flown)を全体で11kg/hとし、水蒸気の質量流量を全体で0.1kg/hとした。脱臭された油を80℃に冷却し、最後に、3種の異なる酸化防止剤を添加した(トコフェロール:1000ppm、パルミチン酸アスコルビル:250ppm、クエン酸:25ppm)。
[調製]
− アスコルビン酸ナトリウムを乳の一部に溶解
− 乳に食用油を添加
− 均質化(2回、150および50バール)
− 乳を200mlの瓶に充填
− 低温殺菌(80℃、カーネル(kernel)で1分間)
− 冷蔵庫で2週間保管
[調製]
− 乳を30℃に加熱
− 脱脂粉乳、安定剤、および糖の混合物を添加
− 混合
− 65℃に加熱
− 食用油を添加
− 均質化(65℃、200kg/cm2、2分間)
− 低温殺菌(90℃、15分間)
− 15℃に冷却
− ナチュラルヨーグルトを添加し混合
− 45℃で3〜4時間(pH4.3)発酵
− 冷却し短時間で激しく撹拌
− 全量をカップに充填し、封止
− 5℃以下の温度で保管
官能法としてプロファイルテストを実施した。官能検査は、消費者が臭いおよび味に基づきその食品を受け容れるかどうかに関連する、最も重要な情報が得られるものである。この方法は非常に感度が高く、風味の安定性に関する情報が得られるものである。
実施例3に記載した方法と同様にして、カナダ国のオーシャン・ニュートリション(Ocean Nutrition,Canada)(ONC)からのエステル交換された海産魚油(marine fish oil)を脱臭した。ONCからのEE75魚油エチルエステルの規格を以下に示す:
外観:黄色油
色数(ロビボンド(Lovibond)赤5・1/4インチ):0.5以下
酸価:3.0以下(mgKOH/g油)
過酸化物価:5.0以下(mEq/kg油)
p−アニシジン価:20以下
EPA含有量:42.0%以上
DHA含有量:22.0%以上
総n−3脂肪酸:75.0%以上
Claims (20)
- 脱臭および安定化された食用海産物油の調製方法であって、規則充填物を含む薄膜塔内において海産物油を向流水蒸気蒸留(CCSD)に付すことと、所望により酸化防止剤を添加することとを含む方法。
- 前記海産物油が、薬草抽出物脱臭剤の存在下に前記CCSDに付される、請求項1に記載の方法。
- 連続式向流水蒸気蒸留である、請求項1または請求項2に記載の方法。
- 前記薬草抽出物脱臭剤が、ローズマリーおよび/またはセージ抽出物である、請求項2または請求項3に記載の方法。
- 前記酸化防止剤が、パルミチン酸アスコルビルおよび/またはトコフェロールおよび場合によりクエン酸を含む、請求項1〜4のいずれか一項に記載の方法。
- 前記海産物油が、少なくとも1種のPUFA(多価不飽和脂肪酸)を含む、請求項1〜5のいずれか一項に記載の方法。
- 前記海産物油が、PUFAを含む食用油またはアルキルエステル、好ましくはエチルエステル濃縮物である、請求項1〜6のいずれか一項に記載の方法。
- 前記蒸留が、0.1〜10hPa、好ましくは0.5〜10hPa、より好ましくは1〜5hPaの減圧下で実施される、請求項1〜7のいずれか一項に記載の方法。
- 請求項1〜8のいずれか一項に記載の方法により得られた脱臭および安定化された食用海産物油。
- 請求項1〜8のいずれか一項に記載の方法により得ることができる脱臭および安定化された食用海産物油。
- FAST指数(商標)が1.5未満、好ましくは1.3〜1、より好ましくは1.1〜1、最も好ましくは1.0であることを特徴とする、脱臭および安定化された食用海産物油。
- ランシマット誘導時間値が6.2時間を超えることを特徴とする、請求項9〜11のいずれか一項に記載の海産物油。
- ランシマット誘導時間が10.15〜20時間の範囲にあることを特徴とする、請求項9〜11のいずれか一項に記載の海産物油。
- 食事療法または健康補助剤、強化食品および飼料(機能性食品/飼料)に加えて化粧品または医薬品製剤の製造における、請求項9〜13のいずれか一項に記載の脱臭および安定化された食用海産物油の使用。
- 請求項9〜13のいずれか一項に記載の脱臭および安定化された食用海産物油を含む食事療法または健康補助剤。
- 請求項9〜13のいずれか一項に記載の脱臭および安定化された食用海産物油を含む強化/機能性食品。
- 請求項9〜13のいずれか一項に記載の脱臭および安定化された食用海産物油を含む化粧品。
- 請求項9〜13のいずれか一項に記載の脱臭および安定化された食用海産物油を含む医薬品製剤。
- 請求項9〜13のいずれか一項に記載の脱臭および安定化された食用海産物油の製造における、規則充填物が充填された薄膜蒸留塔の使用。
- 請求項15および16に記載のn−3PUFAに富む食事療法、健康、もしくは栄養補助剤または強化/機能性食品を、中間食品またはその成分から製造する方法であって、それ/それらに、所望量のn−3脂肪酸を含む量の、そのままの液体形態またはエマルジョンもしくはゲル形態または乾燥形態の前記海産物油を加え、これを高速混合することにより分散させ、所望により、こうして得られたブレンド物をさらなる処理および後処理に付すことにより所望の製品にすることを特徴とする、方法。
