Abstract
【解決手段】 少なくともブラン(ふすま)または大豆たんぱくと、グルテンと、乳成分とを必須成分とする原料組成物を増粘性成形剤を用いて成形した後、イースト菌発酵させて無糖質生地を調整し、焼き上げ又は乾燥固化することを特徴とする無糖質イースト菌発酵製品の製造方法。乳成分は乳糖を酵素分解して得られるグルコース及びガラクトースを含むのが好ましい。また、乳成分が牛乳またはスキムミルクであって、乳成分中乳糖を酵素処理した後原料組成物に添加するのがよい。

Claims (4)
- ブランおよび大豆たんぱくの少なくとも1種と、グルテンと、乳成分とを必須成分とする原料組成物を増粘性成形剤を用いて成形した後、イースト菌発酵させて実質的に無糖質の生地を調整し、焼成又は乾燥固化させることを特徴とする無糖質イースト菌発酵製品の製造方法。
- 乳成分は乳糖を酵素分解して得られるグルコース及びガラクトースを含む請求項1記載の無糖粉物イースト菌発酵製品の製造方法。
- 乳成分が牛乳またはスキムミルクであって、乳成分中乳糖を酵素処理した後原料組成物に添加する請求項1記載の無糖粉物製品の製造方法。
- 補助成分として実質的に血糖値を上昇させない限度でおからおよびぬか成分を加える請求項1記載の無糖質製品の製造方法。
