Abstract
【解決手段】 豆乳および豆乳を含有する飲食物に、甘味の立ちおよびキレが遅い甘味質を有する糖アルコールである、固形分中の糖組成において5糖類以上が50重量%以上の低糖化還元水飴を添加することで、豆乳のもつ後味、エグ味を低減する。これにより豆乳の後味、エグ味が低減され、良好な風味を持った豆乳および豆乳含有飲食物を提供する。

Claims (4)
- 豆乳および豆乳を含有する飲食物において、固形分当たりの糖組成が、5糖類以上が50重量%以上である低糖化還元水飴を添加することにより、豆乳の後味、エグ味を低減することを特徴とする、豆乳および豆乳含有飲食物の風味改善方法。
- 固形分当たりの糖組成が、5糖類以上が50重量%以上かつ7糖類以上が35重量%以下である低糖化還元水飴を添加することにより、豆乳の後味、エグ味を低減することを特徴とする、請求項1記載の豆乳および豆乳含有飲食物の風味改善方法。
- 固形分当たりの糖組成が、5糖類以上が50重量%以上かつ7糖類以上が35重量%以下である低糖化還元水飴を、豆乳100重量部に対し、固形分として1〜20重量部添加することにより、豆乳の後味、エグ味を低減することを特徴とする、請求項1または2記載の豆乳および豆乳含有飲食物の風味改善方法。
- 請求項1〜3のいずれかに記載の豆乳および豆乳含有飲食物の風味改善方法により得られる、風味が改善された豆乳および豆乳含有飲食物。
