(a) タンパク源及びポリサッカライド安定剤を含む第1のスラリーを調製する工程であって、前記第1のスラリーが中性又は弱酸性のpHを有する、工程;
(b) 必要な場合は、5.5〜7.5、好ましくは6〜7.5、より好ましくは6〜7の範囲の値に前記第1のスラリーのpHを調整する工程;及び
(c) 前記工程(a)又は工程(b)の後に、前記第1のスラリーをスプレードライする工程、
を含む。
飲料の粉末前駆体は、消費者が飲用するのに適した組成物を形成するために、液体と混合されなければならない。飲用に適した液体は、どんなものでも使用され得るが、好ましい例は、水及びミルクである。「ミルク」には、フレーバーミルク飲料も含まれる。
タンパク源には、任意の特定タイプのタンパク質、例えば、動物性タンパク質(特に、乳タンパク質)、又は植物性タンパク質が含まれる。
広範囲のポリサッカライドが安定剤として使用され得るが、特にポリサッカライドガムが使用され得る。しかし、好ましい安定剤は、以下から選択される:ローカストビーンガム、タマリンド種子ポリサッカライド、ジェランガム、キサンタンガム、グアガム、タラガム、アラビアガム、カラヤガム、カラギナン、寒天大豆ポリサッカライド、及びそれらの混合物。
好ましくは、炭水化物は第1のスラリーに含まれ、より好ましくは、タンパク源を含む第2のスラリーを介して炭水化物が導入される。好ましい炭水化物には、糖、でんぷん、及びマルトデキストリンが含まれる。
本粉末は、好ましくは、さらに乳化剤、有機酸(例えば、乳酸、リンゴ酸、又はクエン酸)、及び油脂を含み、ミネラルやビタミンなどで強化されている。水又はミルクなどの液体中にいったん分散すれば、この飲料は、少なくとも30分間は凝固及び相分離せずに安定であることが好ましい。
本粉末状の前駆体は、水又はミルクなどの適した液体と混合することによって、所望される中性又は弱酸性飲料を調製するために適用されてもよい。
・ 高剪断ミキサー造粒装置、例えば、Schugiタイプ造粒装置又はLoedige ploughshareタイプ、
・ 圧縮造粒装置、例えばBepex basket extruderタイプ造粒装置、
又は
・ スチーム造粒装置、
などである。
分析手法として、粘度測定、粒度測定、及び相分離測定を用いた。用いた方法は、以下の章で説明されるだろう。
これらの実施例は、それぞれ、スプレードライ工程及び凝集工程を行った4種の粉末状飲料前駆体の調製を含む。
Claims (17)
- 粉末状の前駆体と液体とを混合することによって中性又は弱酸性の飲料を調製するための、前記粉末状の前駆体を製造する方法であって、以下の工程:
(a) タンパク源及びポリサッカライド安定剤を含む第1のスラリーを調製する工程であって、前記第1のスラリーが中性又は弱酸性のpHを有する、工程;
(b) 必要な場合は、5.5〜7.5、好ましくは6〜7.5、より好ましくは6〜7の範囲の値に前記第1のスラリーのpHを調整する工程;及び
(c) 前記工程(a)又は工程(b)の後に、前記第1のスラリーをスプレードライする工程、
を含む方法。 - 前記タンパク源を含む第2のスラリーを調製し、前記安定剤を含む第3のスラリーを調製し、次いでこの第2と第3のスラリーとを混合することにより、前記第1のスラリーを形成する、請求項1記載の方法。
- 炭水化物を、少なくとも1のスラリー、好ましくは請求項2記載の第2のスラリーに添加する、請求項1又は2記載の方法。
- 前記ポリサッカライド安定剤が、ローカストビーンガム、タマリンド種子ポリサッカライド、ジェランガム、キサンタンガム、グアガム、タラガム、アラビアガム、カラヤガム、カラギナン、寒天大豆ポリサッカライド、及びそれらの混合物から選択される、請求項1乃至3のいずれか一項記載の方法。
- 前記スラリー又は前記スラリーのいずれか又は全ての前記スラリーを、加熱処理、好ましくは40〜80℃の範囲の加熱処理を行う工程をさらに含む、請求項1乃至4のいずれか一項記載の方法。
- 前記スラリー又は前記スラリーのいずれか又は全ての前記スラリーを、ホモジナイズする工程をさらに含む、請求項1乃至5のいずれか一項記載の方法。
- 前記工程(c)でスプレードライした産物を凝集させる工程をさらに含む、請求項1乃至6のいずれか一項記載の方法。
- 前記工程(a)において、前記第1のスラリーが、タンパク質の等電点を超えるpH、好ましくは6を超えるpHを有する、請求項1乃至7のいずれか一項記載の方法。
- 前記第3のスラリー中の安定剤が中性であるか、又は負に帯電している、請求項2記載の方法。
- 前記タンパク源が、植物性タンパク質、動物性タンパク質、又はそれらの混合物を含む、請求項1乃至9のいずれか一項記載の方法。
- 前記植物性タンパク質が、大豆タンパク質、エンドウ豆タンパク質、若しくはルピナスタンパク質、又はそれらの混合物から選択され、及び/又は前記動物性タンパク質が乳たんぱく質から選択される、請求項10記載の方法。
- 前記第3のスラリー中の前記安定剤の量が、0.01〜20重量%、好ましくは0.1〜20重量%である、請求項2記載の方法。
- 1以上の追加成分を前記スラリーの混合物に添加する工程(d)を含み、これらの成分が、好ましくは脂質、乳化剤、及び有機酸から選択される、請求項1乃至12のいずれか一項記載の方法。
- 液体、好ましくは水性液体と、請求項1乃至13のいずれか一項記載の方法により製造された粉末状前駆体とを混合することによって調製される、中性又は弱酸性の飲料。
- 0.05〜10重量%のレベルの安定剤を含む、請求項14記載の中性又は弱酸性の飲料。
- 0.5〜10重量%のレベルのタンパク質を含む、請求項14又は15記載の中性又は酸性の飲料。
- 0.1s−1又は10s−1のずり速度において、5〜50mPasの粘度を有する、請求項14乃至16のいずれか一項記載の中性又は弱酸性の飲料。
