Claims (1)
- 【特許請求の範囲】 1.下記の工程a)〜c)を包含することを特徴とする加水分解度の高い植物 性ペプトンを得る方法、 a)植物性蛋白単離物をポリフェノール除去工程に付し、 b)(I)約12〜15%に殆ど一定した加水分解度が得られるまで、ポリフ ェノールが存在しない蛋白単離物を特異的活性のない1種またはそれ以上の エンドプロテアーゼでの最初の加水分解処理に付し、 (II)50%またはそれより高い加水分解度に達するまで、上記工程で得られ る加水分解生成物をより特異的なエンドプロテアーゼおよびエクソプロテア ーゼの混合物での第二の加水分解処理に付し、 c)得られる加水分解物を濃縮し、そして噴霧する。 2.植物性基質が、ひまわり,ナタネ,ヒヨコマメ,レンズマメ,ルピナスお よびブドウかすから選ばれることを特徴とする請求項1記載の方法。 3.蛋白分解酵素が、アルカラーゼ,ケラーゼ,フレーバ酵素およびL−60 0から選ばれることを特徴とする請求項1記載の方法。 4.請求項1〜3のいずれかに記載の方法によって得られる加水分解度の高い 植物性ペプトンまたは植物性加水分解物。 5.臨床,動物および子供の栄養補給を目的とする滋養製品の製造に使用され る請求項4記載のペプトンまたは植物性加水分解物の使用法。
