Una struttura (1) di forno comprende un corpo (2), provvisto di pareti (5, 6, 7, 8, 9) definenti una camera di cottura (4) aperta su un lato (4A) di tale corpo (2), ed un elemento inferiore (20) a tale corpo (2) provvisto di cavità (19) definita da pareti (21, 22, 23, 24) elevantesi da una parete inferiore (24) di detto elemento (20), tale cavità (19) fronteggiando una parete inferiore (8) del corpo (2) suddetto. Almeno parte (26) di tale elemento (20) è asportabile così da consentire l'accoppiamento con un organo riscaldante a gas (29), detta cavità (19) potendo indifferentemente accogliere un organo riscaldante elettrico (60) oppure divenire sede di un flusso d'aria calda generata dall'organo a gas (29), la parete inferiore (8) del corpo (2) sopra citato essendo provvista di aperture (16) che sono preferibilmente intercettate quando la cavità (19) dell'elemento inferiore (20) contiene l'organo riscaldante elettrico (60) e che sono passanti quando tale elemento inferiore 20 è connesso all'organo riscaldante a gas (29).
