Abstract

1438533 Cheese DE DANSKE SUKKERFABRIKKER AS 19 March 1974 [20 March 1973] 13336/73 Heading A2B Skim milk is subjected to ultrafiltration to form a first concentrate, water or an aqueous salt solution is added to the first concentrate to dilute it, the diluted concentrate is subjected to a further ultafiltration to concentrate it, and this second concentrate is used in the manufacture of cheese. If desired, the second concentrate may be subjected to a third ultrafiltration. In one embodiment, the skim milk is passed along a path where ultrafiltration occurs continuously, the water or aqueous salt solution being added at some point along the path.
