1363783 Whey protein concentrates J A MEGGLE [trading as MOLKEREI J A MEGGLE MILCHINDUSTRIE] 26 Oct 1972 [9 Nov 1971] 49488/72 Addition to 1313085 Heading C3H A process for the production of a whey protein concentrate comprises adjusting whey to a pH below the isoelectric point of the whey protein and then subjecting the whey to ultrafiltration at ambient temperature. The process is preferably performed at pH 2À7 to 3À3 and the whey may be adjusted in pH to that value by cation exchange. The whey may be used in admixture with a casein-containing milk derivative.
