Abstract

A process for increasing the yield in cheese manufacture comprises adjusting the pH of the separated whey to an optimum value, preferably 4.6-7.0, heating to 70-100 DEG C. for a period of time, normally 1/2 -30 minutes, sufficient to precipitate the proteins in solution in the whey, separating the precipitated proteins, for example by decanting, filtering, or centrifuging, and adding the precipitate to milk to be employed in the cheese manufacture, preferably immediately before adding rennet extract. The whey may be concentrated prior to adjusting the pH.
