Abstract

A találmány tárgya önthető élelmiszertermék, amely lipid mátrixbanstabilan diszpergált, legalább 1m, méretű, a lipid sűrűségénél 0-25%-kal nagyobb vagy kisebb sűrűségű részecskéket tartalmaz, ahol a lipid95-99,9 tömeg% folyékony lipidből, legalább 0,1 tömeg%, de legfeljebb1 tömeg% kristályos lipidből és 0-4,9 tömeg% nemlipid anyagból áll,ahol a %-os értékek a mátrix tömegére vonatkoznak, és a mátrixralegalább 55%-os átlátszóság jellemző. A találmány tárgya továbbáeljárás a fenti élelmiszertermék előállítására, amely abban áll, hogy- választanak egy folyékony lipidet és egy olyan szilárd lipidet,amely a folyékony lipidben kristályháló képzésére képes, - a folyékonylipid és a legalább 0,1 tömeg%, de 1 tömeg% alatti mennyiségű szilárdlipid elegyét addig melegítik, míg a szilárd lipid teljesen feloldódikvagy elfolyósodik, - az elfolyósodott lipidelegyet erős nyíráskörülményei mellett 60 °C hőmérsékletről 2 percen belül, előnyösen 1percen belül gyors hűtéssel 0-5 °C hőmérsékletre hűtik, - a lehűtöttelegyet 0-5 °C hőmérsékleten nyugalmi állapotban legalább 1 órán át,előnyösen legalább 24 órán át kristályosodni hagyják, átlátszómátrixot nyernek, - a mátrixhoz a végtermék tömegére számított 0,1-30tömeg% részecskét elegyítenek a részecskék egyenletes eloszlásáigvégzett enyhe keveréssel.
