Abstract

A találmány tárgya eljárás folyékony növényi olaj strukturálásáraalkalmas triglicerid zsír előállítására, amelynek lényege, hogy nagysztearin- és nagy oleintartalmú napraforgóolajat, amely olaj legalább12 tömeg% sztearinsav-maradékot és legalább 40 tömeg% olajsavmaradékottartalmaz, nedves frakcionálásnak vagy száraz frakcionálásnak tesznekki, majd a sztearin frakciót összegyűjtik.
