Abstract

[Also in Division A2] In a process for the manufacture of edible food products, a food mix, e.g. sausage meat or fish, is extruded through a nozzle 4 at a rate correlated to the rate of travel of a continuous belt 1 into a tubular casing 2 formed by curling the belt 1 around a conduit 3 so that its longitudinal edges inter-engage, the extruded mix in the casing 2 then passing through a heated passage 5, a cooled passage 6 whence the food product becomes set-up, and finally through a passage 7 heated sufficiently to melt any surface fat on the meat product so that the casing 2 may be opened. This latter operation is carried out by passing the endless belt 1 of which the casing 2 forms part through a horizontal slit in a deflector plate 9, the latter deflecting the food mix sideways so that it may be cut into pieces by any convenient means. The belt 1 is then passed through scrapers 10, 11; washing felts 12, 13, and through a bath 32 of antiseptic fluid. In one alternative embodiment, the longitudinal edges of the casing 2 have corresponding ridged and grooved end portions 55, 56 which are forced into interengagement by a zip fastener type device 51. In cases where it is not desirable to cut the set-up material into pieces after forming, transverse discs may be inserted into the edible material before it is submitted to the setting-up conditions.
