Abstract
<PICT:0963481/C6-C7/1> <PICT:0963481/C6-C7/2> In a process and apparatus for the manufacture of vinegar by the aeration of a fermentable liquor comprising an aqueous alcoholic solution containing acetifying organisms in suspension, liquid is withdrawn from the bottom of a vessel 1 by a pump 4 and passes up through a pipe 5 and down through pipe 6 to be returned to the lower part of the vessel. At the upper end 7 of the down pipe 6 gas is forced into the liquid as by a pump 11; the mixing chamber may be a simple T-piece which may have a restricted tapering outlet, see Fig. 2 (not shown), or may comprise a chamber 13 for liquid into which gas is forced through a plurality of orifices 14, Fig. 3. Gas may escape from the vessel 1 through apertures (not shown) which may connect to condensing apparatus. The lower end of pipe 6 may have a baffling device. Two or more circulation systems 3, 4, 5, 6 may be provided and there may be heat exchange coils 12. The apparatus may be used for a continuous process by running in fresh liquor at a steady rate and allowing a corresponding amount to overflow. Specifications 686,849 and 878,949 are referred to.
