Abstract

Glutamic acid is obtained from a glutamic acid fermentation broth still containing bacterial cells and having a pH of from 5.0 to 10.5 by treating with zinc ions, adjusting the pH to 5.5 to 7.5 to crystallize zinc glutamate, treating the separated crystals with acid to a pH of 2.5 to 4 to crystallize glutamic acid and separating from the mother liquor. This mother liquor containing zinc ions may be used as a source of zinc ions in a subsequent batch. A portion of the mother liquor may be diluted and contacted with a cation exchange resin to absorb the zinc ions, there are then eluted with a further portion of mother liquor and used to treat another batch of fermentation broth.
