881,992. Cheese moulds. ROSSEN, H. A., and RIES, O. H., [trading as PERFORA VOORHEEN H. ROSSEN & CO.]. Nov. 18, 1958 [Nov. 22, 1957], No. 37100/58. Class 84. A cheese mould comprises an outer side wall 1 and bottom 2, and an inner split side wall or shell 3, with overlapping edges 7, which slides in to and out of the mould and bears against the outer side wall during a cheese pressing operation, whey escaping through holes in the outer wall. The shell 3 and its associated bottom and/or lid (not shown) are provided with a plurality of perforations 5, e.g. 20 to 30 per square centimetre, not exceeding 1À0 mm in diameter and the external surface of the shell and/or the internal surface of the outer side wall are embossed with evenly distributed protuberances 6, e.g. ¢ to 1 mm. high, which are preferably oval or round and merge gradually into the surrounding surface. The mould is preferably of metal, e.g. stainless steel, has a lid (not shown), slideable into it, and both the shell and outer side wall have edges 4 and 8, 9 respectively, the edge 9 supporting the bottom plate (not shown), e.g. a perforated and embossed metal disc. In an embodiment the inner shell has a thickened rim which rests on the outer wall when the shell is fully inserted and the lid has a similar rim fitting outside the shell rim and a perforated embossed plate on its inside surface.
