Abstract

L-malic acid or salts thereof are prepared by subjecting an aqueous suspension of calcium, magnesium or zinc fumarate or a mixture thereof to the enzymatic activity of fumarase, and recovering the precipitated malic acid salt. Fumarase derived from lactobacillus brevis or delbrueckii or from escherichia coli may be used and the reaction may be performed at 15 DEG C.-45 DEG C., at a pH of 5-8 for from 16 hours to 3 days. The precipitated malate may be converted to free acid by, for example, acid decomposition with oxalic acid.
