Abstract
A liquid coffee extract, made by contacting untreated roasted coffee with water at any substantially constant temperature between 40 DEG C. and 120 DEG C., is circulated or counterflowed through untreated roast coffee in a container under the minimum necessary pressure with the preclusion of air and at any substantially constant temperature between 40 DEG C. and 120 DEG C. until the extract has reached the desired strength when it is dried. The minimum pressure is between 0.1 and 15 atmospheres subjected only to extraction temperatures of 90-110 DEG C. and preferably 100 DEG C. and reaches a concentration of 30-70% dry substance either prior to or after cooling at the lowest possible flow pressure to 3 DEG C. The extract is then spray dried. Thus at 98 DEG C. up to 35% and even beyond 40% hot water soluble coffee substance may be extracted. The extractor units may either be built into a common hot bath or be furnished with integral heating means. Coffee extract being conveyed from one unit to the other preferably passes through the heating bath or a separate bath. Specification 489,062 is referred to.
