Abstract
Cocoa powder is subjected to steam under pressure in a closed container, the pressure being afterwards rapidly reduced to leave the powder substantially dry. The steam pressures at commencement may be high or low, and be reduced to pressures below atmospheric. The cocoa is afterwards mixed with sugar at high temperature, cooled with constant heating and spray-dried. The resultant mixture is stated to be readily miscible in cold liquids. The upper temperature of the cocoa treatment should not exceed 135 DEG C.
