Abstract
A fluid shortening consists of an edible liquid oil and 3-4% of a mixture of mono-and di-glycerides of at least one C12-C20 fatty acid, and with a ratio of dito mono-glyceride of at least 1 to 7 and not greater than 3 to 7. Specified oils are soya bean, corn, olive, peanut, cottonseed and winterized cottonseed. Preferred glycerides are the stearates and the palmitates.ALSO:A fluid shortening consists of an edible liquid oil and 3-4% of a mixture of mono- and di-glycerides of at least one C12-20 fatty acid, and with a ratio of dito mono-glyceride of at least 1 to 1 and not greater than 3 to 1.
