Abstract
1,207,510. Liquid shortening. NATIONAL DAIRY PRODUCTS CORP. 28 Dec., 1967, No. 58772/67. Heading C5C. A stable, two-phase, fluid oleaginous suspension is prepared by heating a mixture of an edible liquid triglyceride oil and more than 8% and not more than 13% hard fat by wt. of the suspension, said hard fat comprising a triglyceride containing at least 85% C 18 and longer fatty acid radicals and having an I.V. of less than 8; holding the mixture at an elevated temperature for time sufficient to melt the hard fat and destroy crystal nuclei; directly cooling the mixture to a temperature within the #- crystalline range for the suspension (generally 100-130‹ F.); and maintaining the temperature within said range until substantially all of the hard fat is crystallized in the #-phase. The liquid triglyceride may be cottonseed, soybean, peanut, corn, linseed, sunflower seed, olive, safflower seed or fish oils or mixtures thereof, optionally winterized or slightly hydrogenated. The hard fat may be tristearin or hydrogenated vegetable oils. Mono and/or diglyceride emulsifiers may be present. In the example, a shortening was prepared from winterized soybean oil and about 12% by wt. tristearin which was stable and pourable over the range 50-100‹ F.
