Abstract

In the preservation of non-homogeneous meat, e.g. ham, by placing the meat in contact with at least two pairs of electrodes and charging the electrodes with low frequency alternating current until the meat has reached the temperature necessary for preservation, the power supply on each pair of electrodes is made a function of the difference in temperature between that pair of electrodes and the average temperature between all the pairs of electrodes present, such that the power supply is highest on the pair of electrodes between which the lowest temperature is measured. The power supply on a pair of electrodes may be temporarily reduced if the temperature of the meat between that pair of electrodes is higher than that between an adjacent pair of electrodes. Voltages of 50 to 150 volts are preferably employed. According to an example, 4420 grams of fresh, salted ham were pressed by a plunger under a pressure of 3 kg./cm.2 in a rectangular press made of non-conducting material and fitted with three pairs of water-cooled, stainless steel electrodes. A terminal voltage of 55 volts at 15 amps per pair of electrodes was applied. The voltage on each of the pairs of electrodes was regulated with a variable ratio-transformer adjusted by means of a servomotor, which in turn was regulated through three resistance thermometers mounted respectively between a pair of electrodes, such that the voltage of a pair of electrodes increased when the matching temperature was lower than the average temperature and vice versa. After eight minutes, during which the temperature of the ham had risen from 20 DEG to 80 DEG C., a side wall of the press was removed, the treated ham being pressed by the plunger into a tin; the filled tin was sealed, placed in boiling water for 5 minutes and subsequently kept in a water bath at 70 DEG C. for 1 hour.
