Abstract
Highly-packed, heat-stable, oil-in-water emulsions, particularly edible fat preparations, are made by intensive stirring, e.g. stirring in a turbo mixer at 3000 r.p.m., followed by homogenizing, of the oil with an aqueous phase in the presence of a water-soluble emulsifying agent containing an anionic or non-ionic, capillary-active, hydrophilic substance, other than a fatty acid substituted protein hydrolysate, of formula RXY, in which R is a hydrocarbon radical containing at least 8 carbon atoms in a straight chain, X is the -O-, -S-, -N-, -CH2-, <FORM:0801119/VI/1> or <FORM:0801119/VI/2> radical, and Y is an inorganic or organic radical containing a water-solubilizing group <FORM:0801119/VI/3> -SO3M, -PO3M2, or substituted or unsubstituted polyoxyalkylene, M being hydrogen, an alkali metal, ammonium or substituted ammonium. The agents are exemplified by: sodium N-stearoyl, N-lauroyl and N-oleyl sarcosines; sodium N-stearoyl glutamate, proline and glycine; partial esters of phosphoric acid with higher fatty alcohols, e.g. the sodium salt of monostearyl phosphoric acid; aqueous preparations, of pH at least 7.5 of straight-chain fatty acids having at least 12 carbon atoms; higher fatty acid esters of sorbitan polyoxyethylene condensates of at least 20 oxyethylene groups; octadecylpolyoxyethylene ether having at least 20 oxyethylene groups; hexaglycerol monolaurate. Examples are concerned with making 80 per cent oil emulsions of (i) soya bean oil in water containing stearic acid neutralized with sodium hydroxide and brought to pH 7.5-8 by citric acid; (ii) linseed oil in water containing polyglycol stearoyl ether; (iii) a soya bean oil, coconut oil, palm oil, palm kernel oil, hardened whale oil, hardened palm oil and lard mixture in water containing sodium lauroyl sarcoside brought to pH 5.5 by citric acid; (iv) a soya bean oil, coconut oil, palm oil, palm kernel oil, hardened whale oil, hardened palm oil and lard mixture in water containing sodium oleyl sarcoside and sorbitan mono-oleate.
