Abstract

In making butter substitutes, a highly packed oil-in-water emulsion is prepared by emulsifying oil with intensive stirring in an aqueous phase in the presence of a water-soluble emulsifying agent, the dispersed phase is partially solidified and a partial phase inversion of the dispersion is effected by mechanical working, the emulsifying agent being sufficiently hydrophilic to allow production of the highly packed emulsion and sufficiently lipophilic to stabilize the partially inverted dispersion. The emulsifying agent may contain a substance sufficiently hydrophilic and sufficiently lipophilic, e.g. a higher fatty acid-protein hydrolyzate product, sodium N-stearoyl sarcosine, glutamate or proline, a partial ester of phosphoric acid with a higher fatty alcohol such as the sodium salt of monostearyl phosphoric acid, an alkali metal salt of a higher fatty acid such as sodium stearate or palmitate, or the emulsifying agent may contain the requisite amounts of a hydrophilic substance and a lipophilic substance, e.g., sodium N-oleyl sarcosine and sorbitan monooleate, a sodium salt of lauric acid and a partial ester of a polyglycerol and ricinoleic acid. The oils employed according to examples are: melted butter fat; a margarine mix of soya bean oil, coconut oil, palm kernel oil, hardened whale oil, hardened palm oil, lard and palm oil; a margarine mix of cottonseed oil, coconut oil, palm kernel oil, palm oil, hardened whale oil and hardened palm oil.
