Abstract
788,724. Preserving vitamins in coffee; coffee manufacture. JENNY, H. April 9, 1954 [April 10, 1953], No. 10586/54. Classes 49 and 129. In cooling roasted coffee beans, loss of Vitamin C is avoided by allowing the beans to cool to not below the temperature at which the beans would suck in air, and then, while cooling further, continuously removing the water vapour and roasting gases still forming in the beans until they are completely dry and cool. The dried and cooled beans may be ground in inert gas and may be treated with addition Vitamin C. Apparatus for the process comprises a vessel 25 having a cover 26, an ingress pipe 44 for carbon dioxide, and a suction conduit 36; the vessel accommodates a perforated receptacle 29 for roasted coffee beans, in which receptacle are cooling elements 40 and 41.
