Abstract
A process for preserving roasted and roasted and ground coffee in a permanent state of freshness consists in roasting the coffee in an atmosphere of neutral gas, collecting the roasted coffee in a hermetically sealed chamber still in the neutral gas atmosphere and allowing the coffee to cool in this atmosphere so that it becomes impregnated with the neutral gas. The cooling is effected by an inert gas treated with water vapour.
