786,488. Aerated shortenings. UNILEVER, Ltd. June 8, 1955 [June 16, 1954], No. 17691/54. Class 84. In making and wrapping aerated shorening in continuous manner, whereby a stream of liquid fat under pressure is aerated and chilled, crystallized, and fed to an automatic packing machine, the pressure on the chilled, aerated fat is substantially higher than the pressure at which the crystallized fat is fed to the packing machine and the relief of pressure is effected suddenly and before crystallization is completed. With the apparatus of the drawing, a liquid blend of fats, e.g. a 40 per cent coconut oil, 30 per cent hardened beef fat, 30 per cent cottonseed oil mixture at 45‹C., is transferred from a vessel 1 by a pump 4 to a constant level tank 6 and is drawn therefrom by a pump 11 at constant rate into a pipe 25 into which air is drawn at controlled rate by way of a needle valve 9 ; the fat so aerated is subjected to 10-25 kg./sq. cm. pressure and is chilled on passage through tubes 13 and 13<SP>1</SP> wherein rotate agitator-scraper blades 30 and 30<SP>1</SP>, and the fat, on passing from the tube 13<SP>1</SP> through a gate valve 14, expands to a pressure less than 1À5 kg./ sq. cm. into a crystallizing chamber 18 provided with a warm water jacket 15 ; from the crystallizing chamber the fat passes to a packing machine 20.
