Abstract

In the production of sausage casings an aqueous solution of an alginate is extruded through an annular nozzle into a coagulating bath containing a water-soluble calcium salt and also a water-soluble alkali metal or ammonium salt, present in a proportion of at least 0.5 per cent by weight, which does not react with the calcium salt to form a water-insoluble salt by double decomposition. The concentration of calcium salt may be between 0.1 and 30 per cent by weight. Specified calcium salts are the chloride, chlorate, nitrate, or acetate or mixtures of these, while the sodium, potassium or ammonium salts preferred are the chloride, nitrate or bromide. The bath may also contain an acidic substance, e.g. hydrochloric or acetic acid, such that the pH of the bath is 6 or less. The tubular casing may be subsequently passed into a bath containing a water-soluble calcium salt in a proportion of 10-25 per cent by weight to complete conversion of the water-soluble-alginate to the corresponding calcium compound. This second bath may also contain a sodium salt whose concentration is below 3 per cent by weight. The drying of the casing is normally effected by passing it over drying rollers at 70-90 DEG C. The alginate casing may be rehumidified or wetted with water or softened with aqueous glycerine before collecting on reels. Specification 784,235 is referred to.
