To cut oblique slices on an inclined gravity feed slicing-machine, the substance B, e.g. a large sausage, lies in a holder or trough 19 inclined to the disc knife 10 at a more acute angle to the vertical. The trough 19 is swivelled across the knife to cut each slice by a handle 25A on a pillar 25 containing a pin 21 swivelling in a stationary bearing 18. The sausage B is held in at its foot against the knife, by an abutment 31 on a rod 27 axially adjustable in a fixed slotted bracket 29. The substance holder or trough 19 may be the main holder but it may be an auxiliary holder to the usual holder of a gravity feed slicer.
