Abstract

<PICT:0717784/III/1> <PICT:0717784/III/2> Emulsions are homogenized by forcing at a pressure not less than three atmospheres into one or more rotation chambers so as to produce a liquid vortex, the homogenized emulsion leaving through an axially arranged discharge aperture. As shown in Fig. 2A, liquid is introduced from pipe 11 through a tangential inlet into chamber 21, two oppositely directed liquid vortices being produced and the liquid leaving through conical apertures 19, 20 which convert part of the kinetic energy into static pressure, as described in Specification 693,649, [Group II]. Apparatus is also described Fig. 1 (not shown), in which only one outlet is provided. In Fig. 3A, liquid passes in parallel through a series of rotation chambers arranged in two concentric circles between flanges 31, 32; liquid enters through passage 35 and leaves through conduits 43, 48. A second homogenizing device may be provided in series, working at a lower pressure and having larger rotation chambers. The emulsion to be homogenized may be formed in the apparatus described in Specification 708,355. Reference is made to the treatment of milk and other emulsions of vegetable or animal fats in water.
