Abstract
Fruits such as oranges, strawberries and pineapples in which the juice is contained in juice cells, or segments of such fruits, are, preparatory to storage under refrigeration, soaked in a solution of a sugar, or sugar and glycerol, of density greater than that of the fruit juice, and are then treated in a vacuum evaporator, whereby the fruit is dehydrated to a water content at which there is no rupturing of the juice cells on freezing, and, at the same time, there is formed a protective syrup coating on the surfaces of the fruits or fruit segments.
