Abstract
1,232,410. Preservation of fruit and vegetables. R. G. RUSHDEN. 12 Aug., 1969 [16 Sept., 1968], No. 43940/68. Heading A2D. Fruit and vegetables are prepared for storage by blanching and sterilizing said fruit or vegetables such as potatoes, carrots and apples, with water at 150‹ to 190‹F., and then quickly cooling to below 40‹F. The fruit and vegetables are then stored at 33‹F. to 40‹F., preferably in a hermetically sealed container. The water may contain salt and a non-toxic acid such as citric acid.
