Abstract

1,166,608. Irradiating dehydrated food. C. K. WADSWORTH. 29 Dec., 1966 [5 Jan., 1966], No. 58056/66. Heading A2D. A method of reducing the rehydration time of dehydrated fruits or vegetables other than potatoes, having a moisture content of less than 20% by weight, comprises lowering the temperature of the dehydrated food to below 0‹C. and irradiating the food with a source of high energy ionising radiation to a dosage of 0.5-12 megarads. The radiation may be electron beams, gamma-rays or X-rays. Cobalt 60 may be used as a source of gamma rays. The food may be cabbages, carrots, green and red bell peppers, celery, onions, kidney beans, mushrooms, peas, corn, lentils, prunes, apricots, figs, peaches, bananas, strawberries, papayas, raisins, dates, avocadoes and mangoes. The food may be hermetically sealed in cans and irradiated at - 180Œ5‹C.
