Abstract
Fruit and vegetables are allowed to ripen naturally to the full before picking, then they are put in a container, e.g. a crate, and covered with a specially prepd. paper which releases SO2. The amt. of SO2 released should be in proportion to the quantity of fruit or vegetables to be preserved; the rate of release of SO2 is pref. much higher during the first of 48 hrs. than during the remainder of the preservation period. Method can be used for preserving vegetables, partic. green beans and haricots, and fruits, partic. grapes and cherries. Average preservation period is extended from 1 month of 2-3 months. Since the fruit and vegetables are allowed to ripen fully before picking, the producer sells a max. harvest and the consumer receives best quality produce. Expensive cold rooms with controlled atmos. are not necessary.
