An aerated cream-like mixture is made by beating or whipping comminuted cheese, and, if desired, cereal flour, into a smooth, thin mash of boiled potato, the mixture is made into fingers, e.g. by extruding, and the fingers are baked, e.g. at 350-400‹ F., until crisp.
