[Classes 28(i) and 28(ii)] Foodstuffs, e.g. sliced potatoes 38, Fig. 8, are circulated by a paddle wheel 28 and cooked in an endless, e.g. elliptical trough 9-10, supported by firebrick on a brickwork foundation, the trough containing, e.g. oil. The cooked foodstuffs are removed by a wire mesh conveyer 41, Fig. 6, which also acts as an oil drainer. The potatoes are transferred from the conveyer, e.g. to salting and bagging mechanism. The trough 10 is supported on inner and outer rows of spaced firebricks 12 in a heating chamber 13 formed of bricks 14 and with side walls 15 having asbestos lining 16 as shown and supplied with gas burners 19 and an air supply. Flues 27 remove the products of condensation. Detachable cover plates 18, e.g. of burnished metal, surmount the upper end of the side wall 15 and the air spaces 17, and permit of cleaning. The cooking trough may have its top covered and the cooking fumes may be led away through suitable outlet flues assisted by an electric fan. The potatoes 35, Fig. 8, are fed in by a manual &c. pusher 37 and sliced by a rotating cutter 34, the slices 38 dropping into the trough.
