Abstract

The astringent matter in cocoa beans is removed by first heating at a temperature only high enough to remove most of their moisture, then grinding and subjecting to a heating and aerating treatment, such as that described in Specification 539,255, [Group II], at a temperature of 100 DEG to 160 DEG F.
