Abstract
Malic acid is produced by reacting maleic acid with water under heat and pressure in the presence of a strongly reactive inorganic or organic acid and a salt of mercury, zinc, cadmium, copper or other like metal of the first or second group of the Periodic System. Suitable acids are organic sulphonic acids, and carbon dioxide; sulphuric acid causes charring and does not give a satisfactory result. In an example, 20 parts of maleic acid, 2 parts of mercuric sulphate, and 100 parts of water are placed in an autoclave which is filled with carbon dioxide at 20--30 atmospheres pressure and heated to 180 DEG C. for 8 hours. On cooling, an insoluble residue is separated, consisting of fumaric acid and the mercuric catalyst, and the solution on evaporation yields crystals of malic acid.
