Abstract

The method described in the parent Specification for subjecting tea moistened with water to extraction with a theine solvent is modified by treating the tea, after the extraction, with water vapour at a temperature not exceeding 65 DEG . The water vapour treatment can be carried out in vacuo. Also, the extraction agent may be removed by blowing air into the extract, prior to the water vapour treatment.
