Abstract

In preserving bread &c. the dough is mixed with a hygroscopic substance such as glycerine, glucose, magnesium chloride, &c., and is baked in a container onto which a cover is clinched. The cover is completely sealed by soldering while the container is hot, and the container is again heated and allowed to cool slowly. Before opening the container for use, it may be plunged into boiling water or otherwise heated to restore freshness to the contents.
