Abstract

In packing poultry and other meat, the raw dressed meat is subjected to a treatment with common salt, e.g. by immersion in a strong brine, so that it takes up a proportion of salt in excess of that appropriate for seasoning, and is packed in a container together with a substantial amount e.g. 1/3 of the weight of the meat, of an edible gelatine or other jellifying solution. Air is next exhausted from the container which is then sealed and heated to sterilize the contents and transfer salt from the meat to the jellifying solution to reduce the amount of salt in the meat to that appropriate for seasoning. The heat treatment may be effected at about 240 DEG F. for 30 minutes in a steam-heated retort, heated compressed air being introduced to maintain pressure on the container. Cooling is then effected by spraying water on the container while still under pressure in the retort. The jelly formed surrounding the meat acts as a preservative.
