Abstract

Nut kernels, e.g. peanut kernels, are coated with pectin, sodium pectinate or sodium alginate by dipping them in an aqueous solution of the coating substance containing glycerol, sorbitol or other edible humectant. The solution may also contain common salt and/or an edible dye. After this treatment, the kernels may be dipped in or sprayed with an aqueous solution containing common salt and an edible calcium salt, e.g. calcium chloride. Before being dipped in the coating solution, the kernels may be blanched to remove their outer skin and cooked for about ten minutes in oil at about 250 DEG F. After treatment with either solution, the kernels may be air-dried below 80 DEG C.
