Abstract

One or more coatings of sugar, glucose, toffee, or chocolate are applied by dipping, spraying or otherwise to a peeled banana whilst in its natural fully fresh condition. For the purpose of sealing the pores of the fruit, it may be preliminarily coated with one or more of the following substances; albumen, isinglass, gum arabic, gelatine or beeswax to which a small quantity of permissible preservative or astringent substance may be added. A coating of albumen &c. may be applied to the sweetmeat coating instead of, or in addition to, the albumen &c. coating on the fruit. Preferably, the skinned fruit is held during dipping by a wire-clip having thin pointed prongs which enter the fruit. The coated fruits may be stored in household refrigerators for several days, and for an indefinite period at low temperatures. The product is wrapped in tinfoil or cellulose. According to the Provisional Specification, a coating layer of cellulose may be applied, and the coated banana may be decorated with icing sugar or any other substance.
